EINNEWS, November 18—Star watchers may be focused on the pending marriage of Jessica Simpson and NLF player Eric Johnson. But veganphiles are likely more interested in how he intends to support the family: by opening a chain of vegan fast food eateries.
Johnson plans to open the first restaurant in Los Angeles and then to expand the ideas as a national chain.
As most vegans know, there’s a dearth of options, especially in “fast food.” There’s probably a reason for that. Maybe lots of reasons: a small consumer base, the high cost of fresh and organic food, and labor that isn’t going to miss shoveling chicken, burgers and fries.
But the movement away from junk food to healthy food seems to be gaining momentum. Johnson could be on to something. At least he will start with a dedicated fan base hoping he succeeds.
